A flavorful gravy made by cooking vegetable with whole spices, coconut paste which goes well with Malabar bun, parathas & puris.
Ingredients

Oil 30 g

Onion (finely chopped) 150 g

Tomato (roughly chopped) 120 g

Potato (cube) 120 g

Green chilli (finely chopped) 5 g

Ginger garlic paste 15 g

Carrot (cube/julienne) 70 g

Cauliflower (medium florets) 120 g

Green peas 70 g
-
Beans (1-2inch) 35 g
Whole spices

Cinnamon 2 g

Cloves 0.5 g

Stone flower 0.2 g

Cardamom 0.5 g

Bay leaf 0.2 g

For paste

Fresh Coconut chunk 45 g

Fennel seeds 2 g

Directions
Take a grinder jar, add coconut, fennel seeds and cashew, make it paste by adding water. Keep aside.
Move SmartSwitch to Airfryer, choose Sear/sauté, Insert combi pan into Level 1. Choose temperature H5 (high). Press the button start.
Add oil into combi pan, once it got heated add all whole spices mentioned in ingredients list. Cook it for 2-3 minutes.
Now, add finely chopped onion and cook it for 3-5 minutes, sauté until onions turn translucent.
Now, add chopped tomato, ginger-garlic paste & all powdered spices mentioned in ingredients list, mix it well & cook it for 5 minutes.
Now, add all chopped vegetable toss it well and add coconut paste (prepared before), cook it for 3-4 minutes. Stir in between.
Add 300-400ml water into it, mix it well, once it will get boiled. Move the Smartswitch to Cooker, select steam mode and set time for 10 minutes.
Once cooking done. Serve hot with choice of bread/rice.

Serve with a side of Malabar paratha.
