Soft steamed bao buns filled with a flavorful soya and corn stuffing, cooked using Ninja Combi Steam method.
Ingredients
For stuffing

Ginger-garlic (finely chopped) 15 g;

Green chillies (finely chopped) 10 g;

Onions (finely chopped) 60 g;

Corn (boiled) 40 g;

Soya chunks (boiled & chopped) 50 g;

Salt as per taste;

Black pepper 1.5 g;
-
Soy sauce 5 g;
-
Red chilli sauce 10 g;
-
Green chilli sauce 10 g.
For bao
-
Luke-warm milk 40 ml;
-
Yeast 5 g;
-
Sugar 15 g;
-
All-purpose flour 150 g;
-
Baking powder 2.5 g;
-
Salt 1.25 g;

Water 125 ml
Directions
In a mixing bowl, combine lukewarm milk, sugar and yeast. Mix gently and let it rest for 15 minutes until the mixture becomes frothy.
Add all-purpose flour, baking powder and salt to the bowl. Pour in water gradually and knead into a soft, smooth dough.
Place the dough in a combi pan and keep it inside the unit. Move the SmartSwitch to COMBI COOKER mode, select PROVE, and set the temp for 35*C & time for 1 hour or until the dough doubles in size.
Meanwhile, prepare the stuffing. In a bowl, combine chopped ginger-garlic, green chillies, onions, boiled corn and chopped soya chunks. Add salt, black pepper, soy sauce, red chilli sauce and green chilli sauce. Mix everything well to form a flavorful filling.
Once the dough is proofed, remove it and gently punch it down to release excess air. Divide the dough into equal portions and roll each portion into small discs.
Place a portion of the prepared stuffing in the center of each disc. Bring the edges together and seal properly to form smooth bao buns.
Pour 200 ml (1 cup) water into the combi pan. Place the crisper plate over it.
Arrange the prepared bao buns on the crisper plate, leaving slight space between each bun.
Slide the pan into Level 1 and move the SmartSwitch to COMBI COOKER mode. Select STEAM, set the time to 12 minutes (no temperature required).
Press START/STOP to begin cooking. The buns will steam and become soft and fluffy.
Once cooking is complete, carefully remove the buns from the unit. Serve hot.

Ensure dough is soft and stuffing is not too wet for perfect shaping.
