Soft and fluffy homemade milk bread made with simple pantry ingredients, perfect for sandwiches or breakfast toast.
Ingredients

All-purpose flour/Maida 250 g

Milk (lukewarm) 125 ml

Sugar 25 g

Salt 5 g

Butter (unsalted) 30 g

Instant yeast 5 g

Lukewarm water 30 ml (if needed)

Egg white or milk for glazing (optional)
Directions
In a bowl, combine lukewarm milk, sugar, and instant yeast. Mix well and let it sit for 5-10 minutes until slightly foamy.
Take a bowl, add all-purpose flour (maida), butter and salt to it & mix yeast water and knead to form a rough dough. Knead the dough until it becomes soft and smooth. If the dough feels dry, add a little warm water as needed. Shape the dough into a loaf, small rolls, or place it into a bread tin.
Cover the dough and let it rest in a warm place until it doubles in size OR move the SmartSwitch to Cooker mode and select prove & set time for 1 & ½ hour.
Take the combi pan and pour 300 ml water into it. Place the crisper plate over the pan.
Place the dough tin on the crisper plate. Brush the top with egg white or milk for a shiny golden crust.
Move the SmartSwitch to Cooker mode and select Combi Bake mode. Set the temperature to 160°C for 25 minutes. (There will be a preheat window of about 10–15 minutes.)
Press Start and bake until the bread turns golden brown and fully cooked.
Remove the bread from the pan and cool completely before slicing and serving.
Recipe Note
Let it cool down completely before slicing because heat within loaf leads to more cooking.
