Ingredients
Dukkah
- 1 tablespoon coriander seeds
- 1 tablespoon sesame seeds
- 1/2 teaspoon cumin seeds
- 50 g roasted mixed nuts
- 1/4 teaspoon kosher or coarse sea salt
- 1/4 teaspoon black pepper
Fish
- 2 halibut fillets, 140 g each
- 2 tablespoon mayonnaise
- Vegetable oil spray
- Lemon wedges, for serving

Dukkah
- Combine the coriander, sesame seeds, and cumin in a small baking pan. Place the pan in the zone 1 air fryer basket. Set the air fryer to 205°C for 5 minutes. Toward the end of the cooking time, you will hear the seeds popping. Transfer to a plate and let cool for 5 minutes.
- Transfer the toasted seeds to a food processor or spice grinder and add the mixed nuts. Pulse until coarsely chopped. Add the salt and pepper and stir well.
Fish
- Spread each fillet with 1 tablespoon of the mayonnaise. Press a heaping tablespoon of the Dukkah into the mayonnaise on each fillet, pressing lightly to adhere.
- Spray the zone 2 air fryer basket with vegetable oil spray. Place the fish in the zone 2 basket. Cook for 12 minutes, or until the fish flakes easily with a fork.
- Serve the fish with lemon wedges.
