A rich and creamy soup made with roasted red bell pepper, tomato, and coconut milk, infused with herbs and spices for a comforting and flavorful experience.
Ingredients

Red bell pepper (small cube) 100-120g

Tomato (roughly chopped) 170g

Coconut milk 150g

Garlic powder 3g

Directions
Move SmartSwitch to Air Fryer mode. Select Sear/Sauté at H5 (High). Add olive oil and heat for 3 minutes. Then add all seasonings, red bell pepper, and tomato, and cook for 15 minutes until soft and slightly roasted.
Transfer the sauté mixture to a blender, add coconut milk, and blend until smooth and creamy.
Serve hot with toasted bread or breadsticks.
