Ingredients
FOR THE PANINI
- 4 tablespoons pesto

8 slices Italian-style sandwich bread

1 tomato, diced

6 ounces fresh mozzarella cheese, shredded

¼ cup mayonnaise
FOR THE ZUCCHINI CHIPS

½ cup all-purpose flour

1 large eggs

¼ teaspoon freshly ground black pepper

1/8 teaspoon kosher salt

½ cup panko bread crumbs

¼ cup grated Parmesan cheese
-
1 teaspoon Italian seasoning
-
1 medium zucchini, cut into ¼-inch thick rounds

2 tablespoons vegetable oil

Directions
To prep the panini: Spread 1 tablespoon of pesto each on 4 slices of the bread. Layer the diced tomato and shredded mozzarella on the other 4 slices of bread. Top the tomato/cheese mixture with the pesto-coated bread, pesto-side down, to form 4 sandwiches.
Spread the outside of each sandwich (both bread slices) with a thin layer of the mayonnaise.
To prep the zucchini chips: Set up a breading station with three small shallow bowls. Place the flour in the first bowl. In the second bowl, beat together the eggs, salt, and black pepper. Place the panko, Parmesan, and Italian seasoning in the third bowl.
Bread the zucchini in this order: First, dip the slices into the flour, coating both sides. Then, dip into the beaten egg. Finally, coat in the panko mixture. Drizzle the zucchini on both sides with the oil.
To cook the panini and zucchini chips: Install a crisper plate in each of the two baskets. Place sandwiches in the Zone 1 basket and insert the basket in the unit. Place half of the zucchini chips in a single layer in the Zone 2 basket and insert the basket in the unit.
Select Zone 1, select AIR FRY, set the temperature to 190°C, and set the timer to 20 minutes.
Select Zone 2, select AIR FRY, set the temperature to 204°C and set the timer to to minutes. Select SMART FINISH.
- Press START/PAUSE to begin cooking.
When the Zone 1 timer reads 15 minutes, press START/PAUSE. Remove the basket, and use silicone- tipped tongs or a spatula to flip the sandwiches. Reinsert the basket and press START/PAUSE to resume cooking.
When both timers read 10 minutes, press START/PAUSE. Remove the Zone 1 basket and transfer the sandwiches to a plate. Place the remaining 2 sandwiches into the basket and insert the basket in the unit. Remove the Zone 2 basket and transfer the zucchini chips to a serving plate. Place the remaining zucchini chips in the basket. Reinsert the basket and press START/PAUSE to resume cooking.
When the Zone 1 timer reads 5 minutes, press START/PAUSE. Remove the basket and flip the sandwiches. Reinsert the basket and press START/PAUSE to resume cooking.
- When cooking is complete, the panini should be toasted and the zucchini chips golden brown and crisp.
Cut each panini in half. Serve hot with zucchini chips on the side.
