Classic crispy samosa filled with spiced potato mixture, made healthier in air fryer with flaky crust and flavorful filling.
Ingredients
For dough

Refined flour 125 gm
-
Salt 2–3 gm

Sugar 1 gm

Oil 30-40 gm
-
Water 40 gm/ one small teacup
For potato filling
-
Potatoes 375–400 gm
-
Green chillies 4–6 gm - finely chopped

Ginger 4–5 gm - finely chopped
-
Coriander leaves 5–8 gm- finely chopped

Salt to tase

Cumin powder 2gm
-
Coriander powder 2gm

Black pepper powder 1gm

Fennel powder 2gm
Directions
Prepare Dough:
Mix refined flour, salt, sugar, and oil. Add water gradually and knead into a soft dough. Cover and rest for 15–20 minutes.
Prepare Filling:
Boil and mash potatoes. Add green chillies, ginger, coriander leaves, prepared masala, ghee, and all dry spices. Mix well.
Shape:
Divide dough into small balls. Roll slightly, add filling, seal, and flatten gently (like stuffed paratha).
Preheat:
Preheat air fryer at 180°C for 5 minutes.
Air Fry:
Place prepared pieces in the basket, brush lightly with oil/ghee.
Air fry at 180°C for 15 minutes, flipping halfway for even cooking.
Recipe Note
Serve hot with chutney. Use stiff dough for best texture. Brush oil before air frying for even color.
