Directions
Samosa - upper basket
Prepare dough: Mix flour, salt, and sugar. Add oil and rub until crumbly.
Add water gradually and knead into a firm dough. Rest for 15 minutes.
Prepare filling: Take a bowl, mashed boiled potatoes, mix with other ingredients. Give it good mix.
Shape samosa: Divide dough into balls and roll into oval shapes. Cut in half.
Form a cone, fill with potato mixture, seal edges with water, and shape into samosa.
Preheat air fryer: Preheat at 180°C for 3–5 minutes.
Air fry: Brush samosas lightly with oil. Place in upper basket tray without overcrowding. Air fry at 180°C for 20 minutes, flipping halfway, until golden and crisp.
Serve: Serve hot with chutney or ketchup.
Malai Broccoli - lower basket
Prepare marinade base: Grind cashew, green chilli, and ginger-garlic into a smooth paste.
Make marinade: In a bowl, combine paste with hung curd, fresh cream, corn flour, grated cheese, chaat masala, salt, and black pepper. Mix well.
Prep broccoli: Cut broccoli into florets and blanch for 1–2 minutes. Pat dry completely.
Marinate: Add broccoli to marinade and coat well. Rest for 20–30 minutes.
Air fry: Place marinated broccoli in lower basket tray. Air fry at 180°C for 15 minutes, flipping halfway, until slightly charred.
Serve: Serve hot with mint chutney.
