A simple, comforting meal — all done in one pot.
Ingredients

200G jasmine rice (washed)
-
2 chicken thighs
-
1 tbsp oil
-
2 cloves garlic (Smashed)
-
3 slices ginger
-
2 Stalks Lemongrass
-
250G chicken stock
-
Salt, to taste

Ninja Foodi SmartLid 11-in-1 Multi-Cooker - OL550

Optional: spring onion, soy sauce, chili sauce
Garnish

50g Soy Sauce
-
50g Sesame Oil
Directions
Sear Aromatics
- Set the Ninja Foodi to Sear/Sauté mode.
- Add oil, then sauté garlic and ginger until fragrant.
Add rice & stock
- Add washed rice and stir briefly.
- Pour in chicken stock and season lightly with salt.
Add chicken
Place chicken thighs on top of the rice.
Pressure Cook
Switch to Pressure Cook (High) for 3 minutes.
Release & Finish
- Quick release the pressure.
- Remove chicken, fluff the rice, and slice the chicken if needed.
Serve
- Plate the rice and chicken together.
- Garnish with spring onion and soy sauce sesame oil mix. Serve with dark soy sauce or chili.
