Ingredients

Olive oil cooking spray

120ml unsweetened applesauce

60ml honey

120ml non-fat plain Greek yoghurt

1 tsp vanilla extract

1 large egg

350ml plus 1 tbsp wholemeal, divided

½ tsp baking soda

½ tsp baking powder

½ tsp salt

120ml blueberries, fresh or frozen

Directions
Lightly coat the inside of six silicone muffin cups or a six-cup muffin tin with olive oil cooking spray.
In a large bowl, combine the applesauce, honey, yoghurt, vanilla, and egg and mix until smooth. Sift in 350ml of the flour, the baking soda, baking powder, and salt into the wet mixture, then stir until just combined. In a small bowl, toss the blueberries with the remaining 1 tbsp flour, then fold the mixture into the muffin batter.
Divide the mixture evenly among the prepared muffin cups and place into the zone 1 drawer of the air fryer. Bake at 182°C for 12 to 15 minutes, or until golden brown on top and a toothpick inserted into the middle of the one of the muffins comes out clean. Allow to cool for 5 minutes before serving.
