Ingredients
Coconut-Custard Pie
- 240 ml milk
- 50 g granulated sugar, plus 2 tablespoons
- 30 g scone mix
- 1 teaspoon vanilla extract
- 2 eggs
- 2 tablespoons melted butter
- Cooking spray
- 50 g desiccated, sweetened coconut

Pecan Brownies
- 50 g blanched finely ground almond flour
- 55 g powdered sweetener
- 2 tablespoons unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 55 g unsalted butter, softened
- 1 large egg
- 35 g chopped pecans
- 40 g low-carb, sugar-free chocolate chips
Directions
Coconut-Custard Pie
- Place all ingredients except coconut in a medium bowl.
- Using a hand mixer, beat on high speed for 3 minutes.
- Let sit for 5 minutes.
- Preheat the air fryer to 164°C.
- Spray a baking pan with cooking spray and place
- Pour filling into pan and sprinkle coconut over top.
- Cook pie for 20 to 23 minutes or until center sets.
Make the Pecan Brownies
In a large bowl, mix almond flour, sweetener, cocoa powder, and baking powder. Stir in butter and egg. Fold in pecans and chocolate chips. Scoop mixture into a round baking pan. Place pan into the zone 2 air fryer drawer. Adjust the temperature to 148°C and bake for 20 minutes. When fully cooked a toothpick inserted in center will come out clean. Allow 20 minutes to fully cool and firm up.
