Ingredients
- 4 large egg yolks
- 1 tsp. vanilla extract
- 1/3 C. granulated sugar
- 1 tsp. blue spirulina powder
- 1 C. oat milk
- 4 small crunchy chocolate chip cookies, crumbled

Directions
- In a small saucepan, add the egg yolks and sugar and beat until well combined.
- Add oat milk and vanilla extract and stir to combine.
- Place the saucepan over medium heat and cook for about 2-3 minutes, stirring continuously.
- Remove from the heat and through a fine-mesh strainer, strain the mixture into an empty Ninja CREAMi pint container.
- Place the container into an ice bath to cool.
- After cooling, cover the container with the storage lid and freeze for 24 hours.
- After 24 hours, remove the lid from container and arrange into the outer bowl of Ninja CREAMi.
- Install the "Creamerizer Paddle" onto the lid of outer bowl.
- Then rotate the lid clockwise to lock.
- Press "Power" button to turn on the unit.
- Then press "GELATO" button.
- When the program is completed, with a spoon, create a 11/2-inch wide hole in the center that reaches the bottom of the pint container.
- Add the chocolate chip cookies into the hole and press "MIX-IN" button.
- When the program is completed, turn the outer bowl and release it froin the machine.
- Transfer the gelato into serving bowls and serve immediately.
