Hollandaise can be intimidating to make at home, which is why most people only indulge in this decadent treat when they are out to brunch (hello, Eggs Benedict). However, making this butter-based sauce couldn't be easier. Whiz it up and serve it spooned over poached eggs, spread over roasted fish, or drizzled on top of roasted veggies.
Ingredients
- 8 tablespoons unsalted butter
- 3 egg yolks
- 1 tablespoon lemon juice
- Pinch sea salt
- ¼ teaspoon Dijon mustard Pinch cayenne pepper or hot sauce (optional)

Directions
- Place the butter into the blender pitcher. Select SAUTE.
- Add the egg yolks, lemon juice, salt, Dijon, and cayenne or hot sauce (if using), and select BLEND then LOW and run for about 30 seconds, until the color has lightened and the ingredients are fully incorporated.

VARIATION TIP:
Transform this hollandaise into a bearnaise sauce with two simple additions.
