Ingredients
- 225g sliced mushrooms
- 1 small onion, coarsely chopped
- 2 cloves garlic
- 685g 85% lean ground turkey
- 2 eggs, lightly beaten
- 1 tablespoon tomato paste
- 30g almond meal
- 2 tablespoons milk
- 1 tablespoon dried oregano
- 1 teaspoon salt

½ teaspoon freshly ground black pepper
- 1 Roma tomato, thinly sliced

Directions
- Lightly coat a round pan with olive oil and set aside.
- In a food processor with a metal blade, blend the mushrooms, onion, and garlic until finely chopped. Transfer the mixture to a large mixing bowl.
- Add the turkey, eggs, tomato paste, almond meal, milk, oregano, salt, and black pepper. Mix gently until thoroughly combined. Transfer the mixture to the prepared pan and shape it into a loaf. Arrange the tomato slices on top.
- Air fry at 175°C for 50 minutes or until the meatloaf is nicely browned and a thermometer inserted into the thickest part registers 75°C. Remove from the air fryer and let rest for about 10 minutes before slicing.
