Ingredients
Egg & Spinach Quiche:
-
3 eggs
-
Handful of spinach
-
Handful of cherry tomatoes, halved
-
Grated cheddar cheese (any cheese is ok)
-
Splash of water
Grilled Vegetables:
-
1 carrot & ½ head of broccoli
-
1.5 tbsp olive oil
-
Salt & pepper to taste
-
Italian Herbs (optional)
Sriracha Salmon Bites:
-
200g salmon, cut into bite-sized pieces
-
1/4 cup panko breadcrumbs
-
2 tsp garlic powder
-
Pinch of salt & black pepper
Glaze:
-
1 tbsp olive oil
-
1 tsp smoked paprika
-
1 tbsp Kewpie mayo
-
1 tbsp sriracha
-
1 tsp honey
-
1 tsp soy sauce
Juicy Air-Fried Chicken Thighs
-
2x Chicken thighs approx 120g each
-
1 tbsp olive oil
-
1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp smoked paprika
-

Directions
Marinate the Chicken:
- Start by marinating the chicken thighs, as they will take longer to prepare. Toss them with olive oil, garlic powder, onion powder, and smoked paprika. Let them marinate for at least 30 minutes.
Prepare the Salmon Bites:
- Mix panko breadcrumbs with garlic powder, salt, and black pepper. Coat the salmon bites evenly with the mixture.
Toss the Vegetables:
- In an air fryer paper bowl, toss your vegetables with olive oil, salt, and pepper.
Prepare the Eggs:
- In silicone baking trays, whisk eggs with a little water. Stir in spinach, cherry tomatoes, and cheese.
Start Cooking in the 1st Basket:
Set the 1st basket of your DoubleStack Air Fryer to Bake mode at 200° for 22 minutes.
Place the vegetables on the bottom layer.
Place the trays with the egg mixture on the rack above the vegetables.
Shake the basket halfway through cooking (at around 11 minutes).
Important: Remove the egg trays after 6 minutes, as the eggs cook faster.
Set Up the 2nd Basket:
- Set the 2nd basket to Bake mode at 200° for 12 minutes.
Cook the Chicken and Salmon:
Place the marinated chicken thighs on the bottom layer of the 2nd basket.
Place the air fryer bowl with the salmon bites on the rack above the chicken.
Start air frying. After 5 minutes, brush the salmon with glaze and cook for 1 more minute.
Finish Cooking the Chicken:
After removing the salmon bites, let the chicken thighs continue cooking in the 2nd basket until done.
Remember to flip the chicken thighs halfway through cooking for even browning.
