300ml almond flour

3 tbsp granulated sweetener

1 tsp baking powder

2 large eggs

3 tbsp melted butter

1 tbsp almond milk

1 tbsp fresh lemon juice

120ml fresh blueberries

Directions
Preheat the Zone 1 Air Fryer drawer for 176°C. Lightly coat 6 silicone muffin cups with vegetable oil. Set aside.
In a large mixing bowl, combine the almond flour, sweetener, and baking soda. Set aside.
In a separate bowl, whisk together the eggs, butter, milk, and lemon juice. Add the egg mixture to the flour mixture and stir until just combined. Fold in the blueberries and let the batter sit for 5 minutes.
Spoon the muffin batter into the muffin cups, about two-thirds full. Air fry in the Zone 1 drawer for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the drawer from the air fryer and let the muffins coll for about 5 minutes before transferring them into a wire rack to cool compeletely.
