Ingredients

2 eggs, beaten
-
2 ripe bananas, peeled and mashed

220 almond flour
-
4 tbsp granulated sugar
-
1 tsp baking powder
-
2 tbsp coconut oil, melted

80g maple syrup
-
2 tsp apple cider vinegar
-
2 tsp vanilla extract
-
2 tsp lemon zest, grated

Pinch of ground cinnamon

150g fresh blueberries

Directions
In a large bowl, add all the ingredients except blueberries and mix until well combined.
Gently fold in the blueberries
Grease 2 muffin tins.
Place the mixture into prepared muffin cups about ¾ full.
Press your chosen zone - “Zone 1” or “Zone 2” and then rotate the knob to select “Bake”
Set the temperature to 190 degrees C and then set the time for 5 minutes to preheat.
After preheating, arrange 1 muffin tin into the basket of each zone.
Slide the basket into the Air Fryer and set the time for 12 minutes.
After cooking time is completed, remove the muffin thins from Air Fryer.
Place both tins into a wire rack to cool for 10 minutes.
Invert the blueberry muffins onto the wire rack to cool completely before serving.
