I think one of my favorite functions of the Foodi™ Blender is the ability to make jams, jellies, and compotes from fresh fruit. Not only is fresh jam delicious, but it lets you use up leftover fruit before it goes bad. While I know how to make jams and jellies on the stovetop, I never wanted to spend time watching over the pot, mashing the fruit, and ensuring that it cooks down without burning. With the Foodi™ Blender, I don't have to babysit the stove. I simply toss in the ingredients, push a button, and walk away. About 30 minutes later, fresh, hot jam is ready to go! Then I use the CLEAN function, so cleanup is a breeze.
The best way to enjoy fresh jam? Paired with crusty bread and fresh ricotta. Perfect for breakfast, an appetizer, or a little after-dinner treat.
Ingredients
- 3 cups fresh raspberries
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 4 teaspoons fruit pectin
- 4 bread slices (I recommend whole· wheat sourdough)
- ½ cup fresh ricotta Pinch sea salt

Directions
- Place the raspberries, sugar, lemon juice, and fruit pectin into the blender pitcher. PULSE 3 times, then select SAUCE/DIP.
- Meanwhile, in a toaster, toast the bread to your desired doneness and quarter each piece of toast.
- When the raspberry jam is complete, top the toast with jam, ricotta, and a sprinkle of sea salt.
