Ingredients
Coconut Muffins
- 55 g coconut flour
- 2 tablespoons cocoa powder
- 3 tablespoons granulated sweetener
- 1 teaspoon baking powder
- 2 tablespoons coconut oil
- 2 eggs, beaten
- 50 g desiccated coconut
Dark Chocolate Lava Cake
- Olive oil cooking spray
- 30 g whole wheat flour
- 1 tablespoon unsweetened dark chocolate cocoa powder
- 1/8 teaspoon salt
- 1/2 teaspoon baking powder
- 60 ml raw honey
- 1 egg
- 2 tablespoons olive oil

Directions
Coconut Muffins
- In the mixing bowl, mix all ingredients.
- Then pour the mixture into the molds of the muffin and transfer in the zone 1 air fryer basket.
- Cook the muffins at 175°C for 25 minutes.
Dark Chocolate Lava Cake
- Preheat the air fryer to 190°C. Lightly coat the insides of four ramekins with olive oil cooking spray.
- In a medium bowl, combine the flour, cocoa powder, salt, baking powder, honey, egg, and olive oil.
- Divide the batter evenly among the ramekins.
- Place the filled ramekins inside the zone 2 air fryer basket and bake for 10 minutes.
- Remove the lava cakes from the air fryer and slide a knife around the outside edge of each cake. Turn each ramekin upside down on a saucer and serve.
