Ingredients

300g leftover rice
-
100g spinach
-
1 tablespoon fish sauce
-
1 teaspoon oyster sauce
-
2 eggs
-
200g crab meat
-
10 basil leaves
-
3 tablespoons oil
PASTE:
-
2 sticks lemongrass (white part)
-
1 thumb galangal
-
8 shallots
-
1 or more chilli padi (depends on your spice tolerance)

7 cloves garlic chopped
-
Sugar to taste

Directions
Blend ingredients into a fine paste.
Move slider to AIR FRY/HOB mode and select SAUTÉ on Hi-5. Preheat for 3 minutes and add paste. Sauté for 2 minutes.
Add leftover rice and vegetables, sauté for 1 minute.
Add in fish sauce and oyster sauce, sauté for 1 minute.
Make a well in the center and add in eggs. Once combined add in the crab meat and mix. Stop cooking.
Close lid, move slider to COMBI-STEAM mode and select STEAM AIR FRY function at 160°C for 3 minutes.
Add the basil then stir everything together and plate up.
