Oatmeal ranks as my personal favorite in winter months, when every meal is an excuse to warm up. I used to make the quick packets of oatmeal until I learned that it was just as easy to make oatmeal from scratch. Plus, you can easily recreate all of your favorite flavors. This version of Banana-Nut Oatmeal is packed with warm spices, sweet bananas, and crunchy walnuts.
Ingredients
- 1 banana, sliced, divided
- ½ cup rolled oats
- ½ cup water
- ½ cup almond milk
- ½ tablespoon maple syrup
- 1 teaspoon nutmeg
- ½ teaspoon cinnamon Pinch sea salt
- ¼ cup walnuts

Directions
- Place half of the banana, the oats, water, almond milk, maple syrup, nutmeg, cinnamon, and salt into the blender pitcher in the order listed.
- Select COOK then HIGH and run for 5 minutes.
- Divide the oatmeal between two bowls and top with the remaining banana and walnuts, as desired.
Recipe Note
SUBSTITUTION TIP:
If you are nut-free, you can make a few simple swaps to this recipe so that it fits in your diet. Swap almond milk with whole milk, and swap the walnuts with coconut flakes or hempseed.
