Ingredients
Bacon Wrapped Avocado:

1 avocado, sliced, peeled, and pitted

2 slices bacon
-
Fresh parsley, for serving (optional)

Sea salt flakes, for garnish (optional)
Simple Scotch Eggs:
-
4 large hard boiled eggs
-
1 (340g) package pork sausage meat
-
5 slices thick-cut bacon
-

Directions
Make the Bacon Wrapped Avocado:
Preheat the air fryer to 160°C.
Line a small baking sheet with foil or parchment paper.
Cut the avocado into equal slices.
Wrap each avocado slices with bacon strips.
Line your bacon wrapped avocado slices on a baking sheet and place it in the zone 1 air fryer basket and air fry for 5 minutes.
Flip the avocado over and air fry for another minutes, or until the bacon is cooked to your liking.
Serve on a bed of fresh parsley, if desired, and sprinkle with salt flakes, if desired.
Best served fresh. Store extras in an airtight container in the fridge for up 4 days.
Reheat in a preheated 160° air fryer for 4 minutes, or until heated through.
Make the Simple Scotch Eggs:
Slice the sausage meat into four parts and place each part into a large circle.
Put an egg into each circle and wrap it in the sausage. Pi:I in the refrigerator for i hour.
Preheat the air fryer to 235°C
Make a cross with two pieces of thick-cut bacon. Put a wrapped egg in the center, fold the bacon over top of the egg, and secure with a toothpick.
Air fry in the preheated zone 2 air fryer basket for 25 minutes.
Serve immediately.
