Ingredients
CHURROS:

1 cup water
-
¼ teaspoon salt
-
1 tablespoon sugar
-
½ cup butter
-
1 cup all purpose flour
-
4 eggs
COATING:
-
100g fine sugar
-
180g crushed peanuts
SAUCE:
-
120g gula melaka syrup
-
60g coconut cream UHT
RAINDROP AGAR:
-
10g agar powder
-
300g mineral water
-
60g sugar
-
60g de-husked mung beans (tausuan beans washed and soaked for 1 hour)
Directions
CHURROS
Mix first 4 ingredients in a pan, bring to a boil, add flour, and mix until smooth. Remove from heat and mix until dough comes away from side of the pan. Add eggs one at a time, mix until smooth and set to cool. On the SmartLid™, move slider to AIR FRY/HOB mode and select AIR FRY function to preheat at 200°C.
Fill cake decorator bag with ½-inch star tip, create sticks that are 3-4 inches in length by pushing the dough out of the bag onto a parchment paper and transfer to the SmartLid™. Cook 8-10 churros spritzed with oil for 5 minutes on 200°C.
Roll in peanut sugar coating mixture while warm.
SAUCE
Mix ingredients and set aside.
RAINDROP AGAR
Add sugar, water and mung beans into the SmartLid™ and bring to a boil using the SAUTÉ function at setting 3. Once boiled, turn down to setting 2 and simmer for 15 minutes.
Turn off the SmartLid™ and add in the agar powder. Stir till the agar dissolves and pour into any semi-sphere mold. Set in fridge for 4 hours.
ASSEMBLE AND SERVE
Assemble the churros, raindrop agar and sauce on a plate and you’re ready to serve!
