PIE FILLING:

1kg beef chunk, cut into 1-inch chunks

1 red onion, diced

3 carrots, large chunks

½ cup water

3 peeled russet potatoes, halved or quartered

½ bunch parsley

Cheese for topping (as needed)

Salt to taste

Fresh herbs for garnish (optional, like Thai basil)

Butter for mashing (optional)

Milk for mashing (optional)

Directions
Blend garlic, lemongrass, ginger, tomato pureé, and dark soy sauce. Season beef with the rempah paste. Move slider to AIR FRY/HOB mode and select SAUTÉ function on setting 3. Brown the beef in the SmartLid™ for 10 minutes.
After browning the beef, add the diced red onions and cook until soft. Then add the carrot chunks and about ½ cup of water.
Place the reversible rack into the SmartLid™ on top of the meat. Halve or quarter potatoes and place them on the rack in the SmartLid™.
Move slider to PRESSURE mode and PRESSURE COOK on Hi for 45 minutes. Remove potatoes and mash with salt, milk, herbs and butter for a slightly drier consistency. Adjust meat seasoning as needed. Add peas or other vegetables for colour, if desired.
Layer meat mixture in baking dish and top with mashed potatoes. Move slider to AIR FRY/HOB mode and select GRILL function. Grill for a few minutes to melt and crisp cheese on top.
Sprinkle with fresh herbs like Thai basil and garnish with edible flowers. Serve hot, ensuring each plate has a good balance of the meaty base and the potato topping.
