Ingredients
- 1 tablespoon olive oil, plus more for spraying
- 60ml soy sauce
- 60ml rice wine vinegar
- 1 tablespoon brown sugar
- 1 teaspoon mustard powder
- 1 teaspoon ground ginger
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon minced garlic
- 4 (170g) salmon fillets, skin-on

Directions
- Insert a crisper plate in a basket and spray it lightly with olive oil.
- In a small bowl, combine the soy sauce, rice wine vinegar, brown sugar, 1 tablespoon of olive oil, mustard powder, ginger, black pepper, and garlic to make a marinade.
- Place the fillets in a shallow baking dish and pour the marinade over them. Cover the baking dish and refrigerate for at least 1 hour, turning the fillets occasionally to ensure they stay well-coated in the marinade.
- Shake off as much marinade as possible from the fillets and place them, skin side down, in the basket in a single layer, then insert the basket in Zone 1. Select Zone 1. Turn the dial to select AIR FRY, set the temperature to 185°C, and set the time to 15 minutes. Press START/PAUSE to begin cooking.
- The minimum internal temperature should be 60°C at the thickest part of the fillet.
