Ingredients

500g cleaned sea snails (siput)

600ml water
-
250ml coconut milk
-
1 stalk lemongrass, end trimmed and bruised

½ teaspoon ground turmeric
-
20 sliced green bird’s-eye chillies
-
1 turmeric leaf
-
4 kaffir lime leaves
-
2cm knob galangal, peeled and sliced

Salt to taste
GROUND PASTE:
-
60g red onions, peeled and sliced
-
1 teaspoon garlic
-
1 teaspoon ginger

Directions
Cut off the sharp tip of the shell of the sea snails. Prepare ground paste by combining red onions, garlic and ginger in a Ninja® blender and pro cess into a fine paste.
Add ground paste into the base pot and water into the SmartLid™. Move slider to AIR FRY/HOB mode and select SAUTÉ on setting 2, and bring the paste to a boil.
Lower SAUTÉ setting to 1. Add coconut milk and lemongrass and bring to a boil on setting 2.
Lower SAUTÉ setting to 1, add sea snails, ground turmeric, green bird’s eye chillies, turmeric leaf, kaffir lime leaves and galangal. Stir until well-combined.
Season with salt to taste. Boil for another 5 minutes.
Dish out and serve with cooked rice.
