Ingredients
- 685g cod fillets, cut into 1-inch strips
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 eggs
- 75g almond flour
- 25g grated Parmesan cheese
Tartar Sauce:
- 115g sour cream
- 110g mayonnaise
- 3 tablespoons chopped dill pickle
- 2 tablespoons capers, drained and chopped
- 1/2 teaspoon dried dill
- 1 tablespoon dill pickle liquid (optional)
Directions
- Season the cod with the salt and black pepper; set aside.
- In a shallow bowl, whisk the eggs lightly until well combined. In a second shallow bowl, combine the almond flour and Parmesan cheese. Stir until thoroughly combined.
- Working with a few pieces at a time, dip the fish into the egg mixture, followed by the flour mixture. Press lightly to ensure an even coating.
Insert crisper plates in the baskets. Arrange the fish in a single layer in each basket and spray lightly with olive oil, then insert the baskets in the unit. Select Zone 1. Turn the dial to select AIR FRY. Set the temperature to 200°C and set the time to 14 minutes. Press the MATCH COOK button to copy Zone 1's settings to Zone 2. Press START/ PAUSE to begin cooking in both zones. Flip halfway through the cooking time. Cook until the fish is tender and flakes easily when tested with a fork. Let sit in the basket for a few minutes before serving with the tartar sauce.
- To make the tartar sauce: In a small bowl, combine the sour cream, mayonnaise, pickle, capers, and dill. For a thinner sauce consistency, mix in some of the pickle liquid.
