Ingredients
- 3 tablespoons coconut sugar
- 3/4 teaspoon cinnamon
- 190g all-purpose white flour
- 2 1/4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 3 tablespoons cold vegan butter
- 115g cold vegan sour cream
- 1 teaspoon almond milk or water
- 1 tablespoon melted vegan butter

Directions
- In a large bowl, mix the sugar and cinnamon. Reserve 2 teaspoons and set aside for sprinkling at the end.
- To the remaining cinnamon sugar, add the flour, baking soda, and baking powder and stir.
- Using a pastry blender, cut the cold butter into the dry ingredients.
- In a small bowl, mix the cold sour cream with 1 teaspoon of milk or water to thin it.
- Add the sour cream to the dry ingredients and stir until a stiff dough begins to form. If the dough is very dry, stir in up to 1 more tablespoon of almond milk, 1 teaspoon at a time. The dough should be mixed well but still feel slightly crumbly.
- Turn out the dough on wax paper and knead it just enough to work the remaining dry crumbs into the dough, about 30 to 60 seconds.
- Divide the dough into 8 portions and shape those into biscuits, each about 2 inches in diameter.
- Generously brush the tops of the biscuits with the melted vegan butter, then sprinkle with the reserved cinnamon sugar.
- Insert a crisper plate in a basket and spray with nonstick cooking spray. Place all 8 biscuits in the basket, then insert the basket in Zone 1. Select Zone 1. Turn the dial to select AIR FRY, set the temperature to 180°C, and set the time to 10 minutes. Press START/PAUSE to begin cooking.
- Serve and enjoy.
