Ingredients
- 1 tablespoon Bob's Red Mill egg replacer
- 2 tablespoons water
- cooking spray
- 125g all-purpose white flour
- I teaspoon baking powder
- 1/4 teaspoon salt
- 170g mashed ripe banana
- 65g peanut butter
- 60ml almond milk
- 60ml pure maple syrup
- 2 tablespoons coconut oil
- 1/2 teaspoon pure vanilla extract

Directions
- In a small bowl, mix the egg replacer and water and set aside for I minute to thicken.
- Spray a baking dish lightly with cooking spray.
- In a medium-sized bowl, mix together the flour, salt and baking powder.
- In a separate mixing bowl, combine the banana, peanut butter, milk, maple syrup, coconut oil, vanilla, and egg mixture and mix well.
- Gently stir the banana mixture into the dry ingredients. Blend well, but don't beat. The batter will feel very thick.
- Spread the batter evenly in the prepared baking dish.
- Insert a crisper plate in a basket, place the baking dish in the basket, then insert the basket in Zone 1. Select Zone 1. Turn the dial to select BAKE, set the temperature to 165°C, and set the time to 20 minutes. Press START/PAUSE to begin cooking.
- The bread is done when the top has browped and feels firm when pressed with the back of a spoon.
