Ingredients
Spinach Omelet

4 large eggs
-
350ml chopped fresh spinach leaves

2 tbsp peeled and chopped brown onion

2 tbsp salted butter, melted

120ml shredded mild Cheddar cheese
-
¼ tsp salt
Bacon, Egg, and Cheese Roll Ups:
-
2 tbsp unsalted butter
-
60ml chopped onion
-
½ medium green pepper, seeded and chopped
-
6 large eggs
-
12 slices bacon
-
235ml shredded sharp Cheddar cheese
-
120ml mild salsa, for dipping

Directions
Make the Spinach Omelet
In an ungreased round nonstick baking dish, whisk eggs. Stir in spinach, onion, butter, Cheddar, and salt.
Place dish into zone 1 air fryer basket. Adjust the temperature to 160°C and bake for 12 minutes. Omelet will be done when browned on the top and firm in the middle.
Slice in half and serve warm on two medium plates.
Make the Bacon, Egg, and Cheese Roll Ups :
In a medium skillet over medium heat, melt butter. Add onion and pepper to the skillet and sauté until fragrant and onions are translucent, about 3 minutes.
Whisk eggs in a small bowl and pour into skillet. Scramble eggs with onions and peppers until fluffy and fully cooked, about 5 minutes. Remove from heat and set aside.
On work surface, place three slices of bacon side by side, overlapping about ¼ inch. Place 60ml scrambled eggs in a heap on the side closest to you and sprinkle 60ml cheese on top of the eggs.
Tightly roll the bacon around the eggs and secure the seam with a toothpick if necessary. Place each roll into the zone 2 air fryer basket.
Adjust the temperature to 175°C and air fry for it 15 minutes. Rotate the rolls halfway through the cooking time.
Bacon will be brown and crispy when completely cooked. Serve immediately with salsa for dipping.
