Ingredients
- 4 bone-in pork chops (230 g each)
- 2 teaspoon salt, divided
- 11⁄2 teaspoon freshly ground black pepper, divided
- 1 teaspoon garlic powder
- 235 ml tomato purée
- 11⁄2 teaspoon Italian seasoning
- 1 tablespoon sugar
- 1 tablespoon cornflour
- 120 ml chopped onion
- 120 ml chopped green pepper
- 1 to 2 tablespoon oil

Directions
- Evenly season the pork chops with 1 teaspoon salt, 1 teaspoon pepper, and the garlic powder.
- In a medium bowl, stir together the tomato purée, Italian seasoning, sugar, remaining 1 teaspoon of salt, and remaining 2 teaspoon of pepper.
- In a small bowl, whisk 180 ml water and the corn flour until blended. Stir this slurry into the tomato purée, with the onion and green pepper. Transfer to a baking pan.
- Preheat the air fryer to 176°C.
- Place the sauce in the fryer and cook for 10 minutes. Stir and cook for 10 minutes more. Remove the pan and keep warm.
- Increase the air fryer temperature to 204°C. Line the two air fryer drawers with parchment paper.
- Place the pork chops on the parchment and spritz with oil.
- Cook for 5 minutes. Flip and spritz the chops with oil and cook for 5 minutes more, until the internal temperature reaches 64°C. Serve with the tomato mixture spooned on top.
