Ingredients
- Oil, for spraying
- 2 (230 g) boneless, skinless chicken breasts
- 120 g Italian-style bread crumbs
- 20 g grated Parmesan cheese, plus 45 g shredded
- 4 tablespoon unsalted butter, melted
- 115 g marinara sauce

Directions
- Preheat the air fryer to 180°C. Line the two air fryer drawers with parchment and spray lightly with oil.
- Cut each chicken breast in half through its thickness to make 4 thin cutlets. Using a meat tenderizer, pound each cutlet until it is about 3/4 inch thick.
- On a plate, mix together the bread crumbs and grated Parmesan cheese.
- Lightly brush the chicken with the melted butter, then dip into the bread crumb mixture,
- Place the chicken in the two prepared drawers and spray lightly with oil.
- Cook for 6 minutes. Top the chicken with the marinara and shredded Parmesan cheese, dividing evenly. Cook for another 3 to 4 minutes, or until golden brown, crispy, and the internal temperature reaches 76°C.
