Ingredients

350ml shredded Mozzarella cheese

120ml blanched finely ground almond flour

30g full-fat cream cheese

1 large whole egg

4 large eggs, scrambled

230g cooked sausage meat, removed from casings and crumbled

8 tbsp shredded mild Cheddar cheese
Western Frittata

½ red or green pepper, cut into ½-inch chunks

1 tsp olive oil

3 eggs, beaten

60ml grated Cheddar cheese

60ml diced cooked ham
-
Salt and freshly ground black pepper, to taste

1 tsp chopped fresh parsley

Directions
Breakfast Calzone
In a large microwave-safe bowl, add Mozzarella, almond flour, and cream cheese. Microwave for 1 minute. Stir until the mixture is smooth and forms a ball. Add the egg and stir until dough forms.
Place dough between two sheets of parchment and roll out to ¼-inch thickness. Cut the dough into four rectangles.
Mix scrambled eggs and cooked sausage together in a large bowl. Divide the mixture evenly among each piece of dough, placing it on the lower half of the rectangle. Sprinkle each with 2 tbsp Cheddar.
Fold over the rectangle to cover the egg and meat mixture. Pinch, roll, or use a wet fork to close the edges completely.
Cut a piece of parchment to fit your air fryer drawer and place the calzones onto the parchment. Place parchment into the zone 1 air fryer drawer.
Adjust the temperature to 192°C and air fry for 15 minutes.
Flip the calzones halfway through cooking time. When done, calzones should be golden in color. Serve immediately.
Western Frittata
Preheat the zone 2 air fryer drawer to 204°C.
Toss the peppers with the olive oil and air fryer for 6 minutes, shaking the drawer once or twice during the cooking process to redistribute the ingredients.
While the vegetables are cooking, beat the eggs well in a bowl, stir in the Cheddar cheese and ham, and season with salt and freshly ground black pepper. And the air-fried peppers to this bowl when they have finished cooking.
Place a cake pan into the zone 2 air fryer drawer with the butter, using an aluminum sling to lower the pan into the drawer. Air fry for 1 minute at 192°C to melt the butter. Remove the cake pan and rotate the pan to distribute the butter and grease the pan. Pour the egg mixture into the cake pan and return the pan to the air fryer, using the aluminum sling.
Air fry at 192°C for 12 minutes, or until the frittata has puffed up and is lightly browned. Let the frittata sit in the air fryer for 5 minutes to cool to an edible temperature and set up. Remove the cake pan from the air fryer, sprinkle with parsley and serve immediately.
