Ingredients

1 1/2 teaspoons distilled white vinegar

120ml almond milk
- 1 tablespoon flaxseed meal
- 2 tablespoons water
- 125g all-purpose white flour
- 50g coconut sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 2 tablespoons coconut oil
- 1/2 teaspoon pure vanilla extract
- 75g fresh blueberries
- 8 foil muffin cups

Directions
- In a measuring cup, add the vinegar.
- Add enough almond milk to fill to 1/2 cup.
- In a small bowl, mix the flaxseed meal and water.
- In a large bowl, stir together the flour, sugar, baking powder, soda, and salt.
- Warm the coconut oil just enough to liquefy it. Pour it into the bowl with the flaxseed meal.
- Add the almond milk and vanilla and stir together.
- Pour the liquids over the dry ingredients and stir just until moistened. Do not beat.
- Gently fold in the blueberries.
- Remove the liners from 8 foil muffin cups and spray the cups with cooking spray.
- Divide the batter among 8 muffin cups and place 4 muffin cups in each air fryer basket.
- Then insert the baskets in the unit. Select Zone 1. Turn the dial to select BAKE. Set the temperature to 165°C and set the time to 10 minutes. Press the MATCH COOK button to copy Zone l's settings to Zone 2. Press START/ PAUSE to begin cooking in both zones.
- Serve and enjoy.
